JANA’S CREAM SCONES
½ cup of butter—melt and set aside
1 cup of buttermilk
1 egg
2 TBSP sugar (beat together)
Sift: 3 cups of flour
2tsp baking powder
1tsp baking soda
½ tsp salt
Add about 2/3rds of the flour mixture to the liquid and stir well. Then alternating, add the rest of the flour and the melted butter. Once combined, knead on a breadboard, adding more flour as necessary. The dough should be firm and not sticky. Knead for a few minutes. Roll into a log about ½ foot long. Cut into 3 equal parts. They should be circular. One at a time turn circle off its side and pat into a thick circle about 4-5” across. Cut the circles into quarters arrange on a cookie sheet sprinkled with oats and bake in a preheated oven 400 for 20 to 25 minutes. Serve with clotted cream and honey and preserves or simply with butter—that’s how I like them.
